Instructions
Bake the Brownie Layer: Preheat your oven to the temperature indicated on the brownie mix box. Line a 9×13-inch baking dish with parchment paper or spray with cooking spray. Prepare the brownie batter according to package directions and pour it into the pan. Press half of the chopped Oreos into the batter. Bake until the top is set but still soft, about 30 minutes. Remove and let brownies cool slightly.
Make the Cheesecake Layer: In a large bowl, beat the softened cream cheese until smooth. Add the sugar, egg, and vanilla extract, mixing well. Stir in the sour cream until the filling is creamy and lump-free. Pour the cheesecake mixture evenly over the partially baked brownie base. Return to the oven and bake for 25 to 30 minutes, until the edges are firm and center slightly jiggles. Allow the bars to cool at room temperature for 30 minutes, then refrigerate for at least 1 hour.
Add the Ganache and Toppings: Heat the chocolate chips and heavy whipping cream together in a small saucepan or microwave-safe bowl until warm, stirring until smooth and glossy.
